The ingredients needed to make Tripe (matumbo):
  1. Take 1 kg tripe (matumbo)
  2. Prepare 1 large onion diced
  3. Get 3 large tomatoes diced
  4. Prepare 3 tbs cooking oil
  5. Take 1 tbs tomato paste
  6. Make ready 1 bunch coriander chopped
  7. Get Salt
  8. Take Black pepper

Tripe (known as Matumbo in Swahili) may not be everyone's favourite thing to eat but for those who. Well you are in for a huge treat. Tripe,popularly known to most Kenyan households as Matumbo is one of the most affordable source of proteins and other nutrients. When selecting what to buy, try find one that has been cleaned and looks fresh. its however important to note that you also need to clean it further after you get home.

Steps to make Tripe (matumbo):
  1. Wash and cut tripe into small pieces. Put in a pressure cooker, add water 11/2 cup place on heat and boil until soft. Remove from heat and drain the water.
  2. In a separate sauce pan place on medium heat, add oil, add onion. Cook onions until soft, add tomatoes and half of the chopped coriander stir and cook until tomatoes break to a paste
  3. Add the boiled tripe and stir. Add the tomato paste, salt and black pepper. Simmer for 10min turn off the heat and sprinkle the remaining chopped dhania. Serve hot with ugali.

Matumbo is a Swahili word which in this context loosely translates to innards. The Western world refers to matumbo as tripe and I was pleased that they too indulge in this delicacy. Tripe (from French: tripe, of uncertain origin) is a type of edible offal from the stomachs of various farm animals. Beef tripe is usually made from the muscle wall (the interior mucosal lining is removed) of only the first three chambers of a cow's stomach: the rumen (blanket/flat/smooth tripe), the reticulum.
