- Heat oil in pan or kadai. Once the oil is hot add cumin,mustard seeds and allow them to crackle, then add chopped green chillies, ginger paste and asafoetida.Stir and mix well.
- Add cubes of potatoes and saute for 2-3 minutes.
- Add chopped tomatoes, salt and sugar and saute for 3 min.
- Add red chilli powder and Turmeric powder and saute for a minute.
- Add 1 1/2 cup water and let the mixture boil over medium flame.when boils comes cover the pan and allow to cook on medium to low flame until the potatoes are cooked.stir after every 4-5 min.
- It will take 10 - 15 minutes to cook completely. you can add more water if required and cook for few more minutes.(Cooking time and water may vary according to the type of potatoes and the thickness of the pan)
- Once completely cooked remove the lid and then add coriander- cumin powder, mix well and then switch off the gas.transfer it to a serving bowl and then garnish it with fresh coriander leaves and then serve it.
- Ready to eat, you can have it with Puri or Thepla.
