- Firstly soak rice, chana dal, toor dal, urad dal for 3 to 4 hours.
- Add curd and blend to a smooth but slightly coarse paste.
- Further add grated carrot, peas, coriander leaves, ginger paste, green chilli, sugar, chilli powder, turmeric powder, oil, and salt.
- Mix well making sure the batter is slightly thick like idly batter consistency.
- Now add ENO and mix gently.
- Take a deep nonstick pan add oil, mustard seeds, cumin seeds, sesame seeds, green chilli, curry leaves, and hing, allow to splutter.
- Keep few tempering in a bowl.
- Now pour all the batter in that pan and sprinkle the tempering over the batter and cover a lid, slow the flame.
- After 30 minutes flip another side and cook for 15 minutes.
- Check by inserting a knife, if knife comes out clear then handvo is ready to eat.
- Let's cool down for few minutes then Cut into desire shape and serve.
