- Get 3 cups Potatoes (boiled/mashed)

- Prepare 2 tsp Coriander (chopped)
- Take For batter-
- Take 2 cups Besan
- Get 1/2 tsp Baking soda
- Take to taste Salt
- Take as required Water
- Prepare 4 pav
Serve hot with tea and green chutney / tomato ketch up. Serving Ideas: Serve Batata Vada as a snack or side dish with green chilli and coriander chutney. Instructions to make Batata Vada:
- In a pan, heat oil & add the mustard seeds, curry leaves once they splutter, add the garlic, ginger & hing, cook for 2 mins. Now add the turmeric, & potatoes, season with salt & combine the masala with the potatoes. Before removing add chopped coriander & mix well. Combine well & make the vadas.
- Dip them in besan batter & deep fry in oil. Fry for 2-3 mins on medium heat till the crust becomes crispy Now take the pav, split it open add the chutneys & the vada. Serve hot with chillies.
