Instructions to make Batata Vada:
  1. Cook the potatoes until soft, peel and mash coarsely.
  2. Chop or crush together the green chillies, garlic, ginger and the coriander leaves.
  3. Take gram flour in a bowl.
  4. Add turmeric, chilli, salt and soda bi carb.
  5. Add chopped coriander leaves.
  6. Add water and make a thick batter.
  7. Heat oil and add mustard seeds.
  8. Mix in all the rest of the tempering ingredients.
  9. Add to the mashed potatoes.
  10. Mix all well.
  11. Divide the potato mixture into equal sized balls.
  12. Dip each ball in the batter and deep fry until golden brown in colour.
  13. Remove from oil and place on tissue paper.
  14. Serve hot with your favourite chutney.
