Let it dry and then fry it in a low heat, add some little oil, salt and then let it brown. Fry the onion, ginger, garlic, coriander stems, tomatoes together. Procedure of preparing matumbo wet fry. Whoever said Matumbo is not yummy has definitely never tried my dry fry matumbo recipe.

Instructions to make Matumbo fried:
  1. Wash the matumbo in warm water until its clean (3-4 times)
  2. Put it on a chopping board and cut small pieces so that it can cook fast.
  3. Put the pieces on a pan with a little water and boil till tender. When almost ready to fry add some msherekha and let it boil to clear all the water.
  4. When all the water is cleared, add cooking oil and fry the pieces to golden brown.
  5. Add cut onions and stir to cook, then add cut tomatoes and stir for the tomatoes to make a smooth sauce, add salt then capsicum.
  6. Let it cook for 5 minutes then serve hot with ugali.
