Instructions to make KHOYA MALAI KHAJA

    1. For flaky dough for khaja add ghee in flour and mix well. Now knead the medium dough with water. Knead well
    1. Take two little portion of dough. Add green colour in one portion and red in another portion to make colourful dough. Cover with damp cloth and let it rest for 20 minutes.
  1. 3.Meanwhile add sugar in a pan along with 300ml water. Cook on medium heat. Add rose water and lemon juice in it. Lemon prevents crystallizing of the sugar. Cook till one string consistancy. Turn off the flame, sugar syrup is ready.
    1. For making santh (paste) mix 2tbsp cornflour in 4tbsp ghee. This is used to make layers.
  2. 5.For khoya malai filling mash khoya a little with fingers. Now add sugar, cardamom powder, balai, almonds slices and pistachio slices. Mix well and khoya filling is ready. You can add kajoo and raisins too.
    1. After 20 minutes knead the dough again for two minutes till smooth. Now roll white dough and make cylindrical shape. Roll green and red dough lengthwise. Apply some saanth on the white dough and stick green and red dough parallel. Now apply saanth generously on the whole dough. Spread evenly.
    1. Roll the dough gently and make cylinder like roll. Cut this roll into equal portions. Now again cut each portion into equal two portions lengthwise. Many layers are visible in each portion.
    1. Roll each portion into small dics by using heel of the palm. Press the dough gently without harming the colours.
    1. Put 1 tbsp khoya filling in the center of one disk. Place another circle on the top. Press the edges. Pinch the edge and fold. Keep pinching and folding until end of it. Seal the edges well.
    1. Heat oil or ghee on slow flame. Fry both sides on low heat till golden brown. Malai khaja is almost done.
    1. Dip khaja in sugar syrup. Soak for two minutes. Don't dip for long else the khaja will be soggy and soft. - Its ready to be served. - This khaja looks gorgeous, light, crunchy and delicious.
