- Bring to boil.
- Chop all your vegetables accordingly.
- In a frying pan, add cooking oil n heat abit.
- Add onions, cook abit, add leeks n cook till brown.
- Add tomatoes n mix well.
- Add green pepper, garlic n ginger. Mix well.
- Add tomato paste n salt, black pepper as u mix.
- Add in your matumbo n give it a good mix.
- Reduce the heat, cover your pan n let your matumbo cook till tender.
- Add some few minutes you may opt to add some very little water.
- Once ready, put off the heat then add dhania n mix well. If you had left some chopped onions n tomatoes, feel free to add them in at this point as u mix. Your matumbo are ready, serve at your own leisure.
