- Place your matumbo in a basin then add in a lot of salt and rub it on matumbo pieces yaani ni kama una massage hiyo matumbo (hii inasaidia kutoa hiyo kuteleza kwa matumbo na uchafu zenye huwa zimekwama kwa matumbo). - Keep rubbing with salt for about ten minutes na itatoa alot of liquid. next osha kwa maji mengi (clean until ubaki na maji safi this means thorough cleaning hehehe). - Rinse as many times as possible. Cut in to big pieces kwa sababu when it cooks huwa zina shrink.
- Eka kwa sufuria then add your garlic, ginger and vinegar ama maji ya ndimu, ongeza maji then boil until tender. - I dont karanga mine in the same sufuria enye nime boil nayo. in another sufiria add cooking oil na nikawacha ikawa moto then i add in matumbo this is to make them as dry as possible then add in your onions.
- Let the onion cook while steering to avoid it kukwama kwa sufuria and to obtain the golden brown colour then add in tomatoes and let the tomatoes cook hadi ziwe soft at this stage you can add thufu but i always like mine ikiwa dry. remember you need to taste kama chumvi iko because tuliosha na chumvi sometimes salt huwa inabaki mingi sometimes inabidi you add a pinch - Add your chopped dhania and serve
