  4. Allow pressure cooker to cool, then remove lid and place gammon joint on a plate to rest.
  5. Use the cooking liquid to make ham stock, boiling up for 20 minutes or so with a roughly chopped onion, carrot and perhaps a stick of celery (straining off and disposing of the solids afterwards) or just on its own. “Waste not, want not”.
  6. Carve and serve the joint hot or cold with accompaniments of your choice.

My family as a whole absolutely love a Ham or Gammon Joint and that is a bit of a minor miracle in itself. Stud the gammon with cloves and brush with the glaze. A gammon joint can be cooked by boiling or a combination of boiling and baking. Cooked gammon can be served hot, traditionally with parsley sauce or a sweet cranberry and port relish. Smoked gammon is different from a smoked ham in that ham comes cooked and ready to eat, while gammon still needs to be prepared.
