- Heat mustard oil in a kadhai. Add boil potatoes and fry until they turn brown from all sides. Remove them when done and keep aside.
- Now add bay leaves,cumin seeds and slitted green chillies in the same oil and let them crackle for a few seconds.
- Now add in ginger paste,cumin powder, coriander powder, red chilli powder,sugar,salt and yoghurt, stir well and cook until oil starts to separate.
- Add little water into the the masala and mix thoroughly.
- Now at the fried potatoes and a cup of water and bring the mixture to a boil.
- Cover and cook for 10-12 minutes on low heat.
- Add garam masala powder into the gravy and mix well.
- Sprinkle chopped coriander powder on the top,mix well and again cook for a minute.
- Switch off the flame when done.
- Garnish with more fresh coriander leaves and serve hot.
