- Take 1 cup wheat flour
- Make ready 1/2 cup rice flour
- Take 1/2 cup sorghum (jowar)flour
- Get as required oil
- Get 1/2 tsp fenugreek powder
- Get 1/2 jeera powder
- Get 1 tbsp turmeric
- Make ready to taste salt
- Prepare as required water
- Take 250 gms boiled chicken
- Take 1 tbsp paprika
- Make ready 1 tbsp ginger garlic paste
- Get 1 tsp garam masala
- Make ready 1 tsp onion garlic masala
- Make ready 1 tsp coriander powder
- Get 1/2 tsp kitchen king masala
- Prepare 1/2 lemon juice
- Prepare As required chopped coriander
- Take 2 chopped onions
- Take 2 chopped tomatoes
- Get 3 tbsp shredded coconut
- Get 1tsp, dhania seeds
- Get 1 onion roughly chopped
- Get 2-3 chilles
- Get ½inch ginger
- Take 4-5 cloves garlic
Kombdi Vade is staple food of Malvan which is very popular in west coast in Maharashtra. Very flavorful, crispy and tastes fabulous with Chicken curry specially during rainy day. Kombdi Vade is a recipe that is a specialty of Marathi mums. So many years later, aunty's Kombdi vade recipe is still an enigma to us.
Steps to make Malvan Special Kombdi Vade:
- These are all ingrediants required
- In a pan add 3 tbsp oil and add shredded coconut dhania seeds,roughly chopped onion, some coriander, ginger and garlic, and roast well
- In a bowl add wheat, rice &jowar flour
- Add in fenugreek powder, jeera powder, 1tsp turmeric, salt
- In a kadai add oil and let heat well
- Add in chopped onions and fry until brown
- Add in ginger garlic paste and saute well until it leaves it's raw smell
- Add in chopped tomatoes and the shreddedcoconut, paprikapowder,turmeric,dhania powder, onion-garlic masala, garam masala, kitchen king masala and saute well
- Fry all the masala untill it leaves oil from edges
- Add in boiled chicken with all the chicken stalk and give it a good mix
- Add water as per your desired consistancy. it's ok if not added cz I haven't
- Add salt to taste
- And cover the kadai with lid for about 5 to 8 mins
- Remove the lid and add lemon juice and mix well
- Garnish with chopped coriander
- Knead a medium consistancy dough and cover it with lid or damp cloth and let it aside
- For vadaas, heat oil in a kadai to deep fry
- Take a small piece of plastic bag and fix it well with oil on both sides
- Take small portion on the dough (bit bigger than a size of a puri) and pat it with fingers to form a puri like shape
- I have also tried some like a shape of medu vada
- Deep fry these
- Malvan special Kombdi vade is ready to serve.
- Serve it hot with onion,lemon and chilli
