  4. Now add water as required, just mix up, don't knead the dough.
  5. Cover and rest for 15 to 20 minutes, meanwhile make sugar syrup, in deep pan add sugar and water
  6. Add cardamom (optional), and let it boil, now add few strands of saffron
  7. Brings to boiling point and remove from heat, after 20 minutes, put the dough on counter top, and roll it out length wise using your hands.
  8. Now cut into equal pieces, and thumb press the dough into centre and make it in doughnut shape.
  9. Heat oil for deep frying bhaalu shahi on medium low heat, and cook it on medium low heat. While frying it will turn into flaky texture, so don't worry, it is symbol of perfect bhaalu shahi 😅
  10. When turns to golden colour, remove from oil and transfer to paper towel, and after cooling down dip into sugar syrup
  11. Dip for 1 minute per side, transfer it to serving platter, garnish with pistachios and serve in your favourite style.
